What’s a girl to do when she has half a pineapple sitting in the fridge? She makes pineapple margaritas, obviously! Margaritas are my favourite cocktails and probably one of my favourite drinks- fresh, sharp, potent- and I love a salty rim ; )
To make this beauty, you will need:
a cocktail shaker
ice
plate of ground sea salt and freshly grated lime juice
35ml/1¼fl oz Gold Tequila
40ml/¾fl oz pineapple juice, fresh is best but bottled will do
35ml/1¼fl oz fresh lime juice
1. Chill your glass in the freezer.
2. Pour salt on to a plate, grate the zest of one lime over the salt, mix together.
3. Run a wedge of lime around the edge of your glass and then dip into the salt to create a rim. Set aside.
4. Mix the pineapple juice, tequila and lime juice in the cocktail shaker with a handful of ice and shake vigorously.
5. Strain into your glass. Serve.
